sparkling wine + fruit cocktail

I wasn’t quite sure what to call this cocktail. Champagne or Mimosa bars inspired the idea to make this drink. You could also definitely use champagne for this instead of sparkling wine. But usually on a mimosa bar you find fruit juices and fresh fruit. For this drink, I just used a fruit puree. A local farm near me sells THE BEST EVER homegrown strawberries. They are at their absolute best when they pick the first crop. Seriously THE BEST! I don’t mean to shout at you but I can’t help it. I received an email from the farm 2 days ago that their strawberries were ready and I went the first chance I was able to. The first crop of strawberries are small and red the whole way through. That’s the key to a real strawberry. It’s not white in the middle. It’s red. And perfectly delicious.

This local farm also has a little winery in the back of the store that sells wine from Lake Erie. I mean c’mon, a local farm with hella good fresh fruit and vegetables that also sells wine. You know where to find me all summer.

So, can you guess where I’m going with this…I bought a bottle of sparkling Niagra wine and pureed some of THE BEST strawberries and made myself a cocktail!!! Now of course I’m also tempted to buy a bottle of champagne and eat some of THE BEST strawberries with it ala the movie Pretty Woman. You know the scene I’m talking about right? Tell me you do…Sorry, but Pretty Woman is one of my fav all time movies ever. Like top 5 favorites. Please don’t judge me. Or tell me I’m showing my age.

I didn’t stop at strawberries though. I pureed a mango and made a strawberry mango sparkling wine cocktail. Because the mango on my countertop was getting a little too ripe. It was quite tasty as well.

Puree fruit of choice and add about 1/2 Tbl to a glass. Add sparkling wine and stir until the bubbles subside then top off with more sparkling wine. Enjoy!
