It’s national Pi day! So I made us a margarita pie!
I’ve wanted to try this recipe for years. So it popped into my head that it’s margarita Monday and today is Pi day- 3.14 or march 14 or 3-14 you get it right? Actually I read that last year was even more significant to Pi day because it was 3/14/15 or 3.1415 and the number continues forever(3.141592653 to infinity). This year is an important Pi day known as “rounded Pi day.” Because when you “round” Pi to the ten thousandths you get 3.1416 Pretty cool, huh? It won’t happen again for another century…Did you know that it’s Einstein’s birthday today as well. I’m just full of information today. So instead of saying I’m a walking dictionary should I say I’m a walking google? Or a walking wikipedia? Sorry wondering thoughts.
Let’s get back to this Margarita Pi(e)
Blend pretzels, sugar, and butter in a food processor and press into a pie pan. Bake 5-7 minutes.
Mix limeade, vanilla ice cream, lime peel, tequila, and orange liqueur in a bowl and pour over crust.
Then freeze that bad boy.
Once pie is firm, cut a slice and enjoy your Margarita Pi(e) Monday!

Who knew you could eat your margarita? It really does taste just like one. A frozen creamy lime margarita with a salty pretzel crust. It is just so good. I can’t wait to make this pie again in the summertime for an adult picnic or adult pool party.
