Just a few things I’ve been up to lately….
Gotta get to Game of Thrones season finale straightaway! Oh my, where to begin? Winter has been coming for 6 seasons and finally, winter is here. What that means, I have no idea. Yea, so I liked the finale. Of course there just had to be a few little annoying things like making the assumption that the baby in the flashback is really Jon Snow, but of course they “whispered” it and we have to wait a year to find out fo sho. That’s just rude. Ayra pulling her sneak attack on Walder Frey was freaking awesome. Oh and poor poor Tommen. Weakling. Which is probably what Cersei thought when she didn’t even shed a tear. I’ve always hated Cersei . But this past episode made me like her for just a minute. The conniving bitch is back. And she’s the Queen. Hopefully not for long. But, of course the last season of GOT is being split up, so I bet it takes like 2 years to get to the end of this whole story.
So I’ve got a cute little cat story for you! So our inside cat Elvira kittypants is allowed outside now, but only with supervision. And she just absolutely loves it. She chases birds, and moles, and butterflies. She loves hiding in the garden amongst the tomato plants too. So our outside cat Nero just watches her run around like a 4 year old with ADHD, or he just simply ignores her. But one day there was a dead bird on our porch(I’m not sure why, Nero didn’t kill it, but maybe it ate too much cat food??) and Elvira kittypants had the best time ever playing with it. A few days later, Nero came running across the alley from the woods with a mole that he had caught. So of course we had to praise him and thank him and tell him he’s such a good little boy for bringing us a present because he loves us too. But it was the cutest thing ever because he set the mole on the porch by Elvira kittypants for her to play with. She can’t actually catch anything because she was declawed(don’t judge Mikey, he feels horrible for getting it done to her), so Nero went out and caught something for her and he sat back and watched her play with the mole. And he’s done it twice now. He pretends he doesn’t like his annoying little sister, but we know better now.
I was swimming at Elaine who turned 40 house over the weekend. If you follow me on instagram (lisa_itsmyhappyhour) then you got to see Elaine who turned 40 and her dog Chloe swimming in her pool. Omg it’s too much. The most adorable thing ever!
I took some apples for Elaine’s piggies that she just got a few weeks ago. They’re so “stinking” cute!
So the sunday before last, I was screaming and cheering and clapping at the hockey game as the Pens won the Stanley Cup. This sunday, I was screaming and cheering and clapping at Game of Thrones as Ramsey got his face ate off by his dogs. Between the hockey playoffs and GOT, I’ve had quite an interesting, fun, emotional spring/summer TV experience. And Game of Thrones ends this sunday. Oh my. Ray Donovan starts this Sunday too, I can’t wait!!
So I finally got to do what I’ve been wanting to for almost a year now. I read a really good book in a few days while sitting in the sun. One of those “beach reads” as they call it. I’ll call it a “porch read” this year because I’m not going to the beach. The book was “Rumors” by Elin Hilderbrand. More of an easy read style of book but kept my interest enough that I didn’t want to put it down. And I got to work on my tan too.
Sunday suppers is going on hiatus for a few weeks. Between a weekend getaway, covering for vacations, and 4th of July parties, I’m not cooking. Haha. But I do hope to have more cocktail, appetizer, and smoothie recipes for you to make up for it.
Oh, and I also started a new job and of course there’s my never ending doctors appointments for the mystery illness. That may or may not be an allergy to cats. WAAAAHHHH!!!!
Tonight’s sunday suppers is brought to you by shrimp and grits.
And this is a total cheaters version of shrimp and grits. Like so super simple easy, I should be embarrassed by it. But I’m not. The original recipe came from Oxygen magazine. It’s called Shrimp and Chard over Cheesy Grits with Oven-roasted Tomatoes. My version is shrimp, spinach, and tomatoes over cheesy grits. (The lazy man’s version). I used diced tomatoes from a can, frozen cooked shrimp, and instant grits. And it was delicious!
I sautéed the tomatoes in a skillet on the stove with minced garlic from a jar (I’m even too lazy to chop garlic). Then I added in some fresh spinach leaves.
Next is the thawed cooked shrimp.
It only takes mere minutes to saute it all and it only takes 1 minute to cook the instant grits. Then you mix in some shredded cheese.
Place the tomato mixture over the cheesy grits and you have a very healthy, very filling, low calorie, high protein delicious meal in a few minutes. Minutes people. Minutes. It really is embarrassingly easy. But the flavor! So good, so good. Shrimp, spinach, and tomatoes over cheesy grits 1 small can diced tomatoes
1 Tbl olive oil
2 tsp minced garlic
1 cup fresh spinach leaves
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
8oz medium cooked shrimp, thawed
1 packet quick cooking(instant) grits
1/2 cup shredded Colby jack cheese
Heat olive oil in a skillet over medium heat. Add tomatoes, garlic, salt and peppers and saute for about 3 minutes. Add garlic and spinach leaves. Saute for about 2 minutes. Add shrimp and saute for about 3 more minutes. Meanwhile, cook instant grits according to package directions. Add about 2oz shredded cheese to grits and stir. Top with tomato/shrimp/spinach mixture.

I just love me a good margarita. Can you tell? I’ve only posted like 27 margarita recipes in the past year. Hey maybe I’ll try 365 days of margaritas. Bet I could do it!
So my theory is this- when someone with a giant patch of rhubarb offers to give you some rhubarb for free, always say yes! Even if, like me, you no longer make and sell your award winning strawberry rhubarb pies. Because there are still endless things to do with your rhubarb. Like this margarita. Or this strawberry rhubarb bourbon smash that I made last year for national bourbon day but completely forgot about national bourbon day this year??? I love bourbon too. And I call myself a cocktail blogger. There’s also this strawberry rhubarb martini I almost forgot about. Or this strawberry rhubarb Moscow mule. Wow was I on a strawberry rhubarb kick last year.
With my abundance of rhubarb last year I also made strawberry rhubarb jelly and rhubarb jam with chocolate mint. I plan on doing the same this year with my rhubarb. If I don’t make too many margaritas and use it all up. I’ll keep you posted.
This margarita starts with a rhubarb simple syrup. Which turns into this pretty pink liquid after you strain it.
All of the ingredients go into a shaker.
You could totally throw it all in a blender too, if frozen margs are more your style instead of on the rocks. And don’t forget the salted rim! Rhubarb margarita
2oz silver tequila
1oz grand marnier
2oz rhubarb simple syrup
3/4oz lime juice
Pour all ingredients in a shaker with ice. Give it a good shaking and pour into a salt rimmed glass. Rhubarb simple syrup
1 cup sugar
1 cup water
1 cup chopped rhubarb
Place all ingredients in a small saucepan and place over medium heat. Stir frequently to dissolve sugar. Bring mixture to a simmer and cook, stirring often, for approximately 10 minutes. Let cool and then strain mixture. Store in airtight container in refrigerator until ready to use.
How could I possibly say no to free rhubarb??!!

So pretty much the whole 3rd period of game 6 of the Stanley Cup playoffs I was pacing the floor and periodically screaming at the tv. I was so nervous and so excited and couldn’t contain myself. Elvira ktitypants had enough of my shenanigans and was hiding upstairs. Nero was on the couch taking his evening/night time nap and left as soon as we won and I was jumping up and down screaming and running around the house. Yes, I’m that kind of fan. During the game I was also reminiscing about how I was bartending 7 yrs ago during our last Stanley Cup championship and it was on of the busiest nights our bar has ever seen. I was bartending by myself the whole night and didn’t see much of the game until the last 2 minutes when everyone just stopped and held their breath and BOOM! We won. I jumped and screamed just the same as this past sunday. Except that night 7 years ago I also ran around the inside of the bar and high fived every person sitting around the bar. It was awesome. It was also awesome on sunday, just me and Mikey watching the game and I could scream and swear and hide around the corner with my fingers crossed saying “oh please, oh please, oh please let the pens win tonight!” And they did. And Mikey surprised me the next day and bought me TWO Pens Stanley Cup shirts and I love them! And I love him. Awww sappy stuff. Haha.
So I went to an “I do BBQ” over the weekend. My girl Madisyn’s version of a bridal shower and let me tell you, it was the best bridal shower I ever went to. Apparently the “I do bbq” are what all the cool kids are doing. It’s all over Pinterest and Etsy. It’s a couples shower. Kids are invited also. And instead of playing regular old shower games, Madisyn had a relay slip n slide flip cup game. Now that’s my kind of bridal shower. I didn’t participate though because I was driving and I was in a dress. I do have limits you know. But Trixie has no excuse. She wasn’t driving and was wearing a romper. She just didn’t feel like pulling out her party tricks that day I guess.
TV talk- Game of Thrones!! I can’t take it. I think there’s only 2 more episodes left. WTF??!! It’s just so good this season, I can’t stand it. Like for real. Watch it!!! Some trainwreck tv shows I’m watching at 2am when I can’t fall asleep-arranged, teenage newlyweds, famously single, marriage boot camp reality stars “tarando”, HALP ME!!!!!
I had 2 really weird episodes of deja vu recently. I forget the first, but the second was when I was in a doctor’s office and heard the song “Cruel Summer” and saw a “Better Homes and Gardens” magazine sitting on a table. The song “cruel summer” gets me everytime and I’m not sure why. You know that song by Banarama right? It came out the year my boyfriend was born. Hahahahahahahah! Yeah. I think it was the Better Homes and Gardens magazine. I remember reading it all the time like 15 years ago and it somehow invoked this weird memory in me when I saw it on the table.
