I’ve been talking all week non stop about breakfast. I mentioned my breakfast in bed twice. Here and here. Then I talked about breakfast in Mexico here. So I decided to make us a breakfast shot. Optional to have it in bed. Or you could wait until noon and call it brunch. There’s actually 2 different shots here.

One is the breakfast shot with bacon that you chase with orange juice and the other is the cinnamon toast crunch shot. The breakfast shot was popular for a minute at my shithole dive bar where I work. Minus the bacon. Although it probably would have been a mega hit if I could have served it with a slice of bacon.

The breakfast shot tastes like pancakes with syrup. It’s really kind of crazy. Then you can eat the bacon and chase it with orange juice and that’s what I call a real breakfast of champions. The breakfast shot usually calls for Jameson whiskey although I’ve seen it made with Crown Royal Maple too. Any whiskey could work but the Jameson has a really smooth taste that blends well with the butterscotch schnapps to give it that pancakes with syrup flavor. Actually I should say any Irish whiskey would work well in this shot.

The cinnamon toast crunch shot is cinnamon rum cream and cinnamon whiskey. Tastes just like the milk at the bottom of the bowl after you eat cinnamon toast crunch cereal. Actually cinnamon rum cream tastes like that on it’s own but a little more milder.

The breakfast shot
1/2 oz whiskey (preferably Jameson)
1/2 oz butterscotch schnapps
2 oz orange juice
Bacon optional
Combine whiskey and schnapps in a glass and drink. Follow immediately with orange juice.

Cinnamon toast crunch shot
1/2 oz cinnamon whiskey (I used Fireball)
1 oz cinnamon rum cream (preferably chilled)
Combine in a shot glass.

Mexican cocoa

Mexican cocoa aka Champurro. Not to be confused with Mexican hot chocolate which has cinnamon and usually either chili powder or cayenne pepper added into the mixture. Champurro is a rich, creamy cocoa drink that is said to be traditionally served at weddings. Two years ago my boyfriend and I went to Mexico on vacation. They had an awesome breakfast buffet with everything under the sun you could possibly imagine. And every morning we would take a very long walk along the beach. Probably around 3 miles or so and sometimes we would take another walk later in the day too. After our morning walk we would be completely ravenous and go to breakfast and eat like kings. Coffee was an absolute must and although they had an amazing selection of juices and champagne for mimosas and all the fixings for a bloody mary, I didn’t want to drink that early in the morning (shocking, I know). I think it was because of all the great food to stuff my face with. But one morning I just happened upon a large pot of hot chocolate. But it wasn’t spicy like a “Mexican hot chocolate.” For some reason it just tasted so good and hit the spot even though I had my coffee and all that food to eat. Not to mention I was in a tropical location with sunshine and 80 degrees.

Fast forward 2 years and I can’t stop thinking about that hot chocolate or cocoa I should say. It’s very cold out, it’s winter, and I’m craving something warm and rich to drink. Without alcohol in it either (shocking, I know). I found this recipe in a cookbook my bestest friend gave me for xmas one year. The cocoa turned out a little bit thicker than I wanted so I added extra water to the mix. And I have to say it’s pretty darn close to the taste of the cocoa I had in Mexico 2 years ago.  When I was growing up, I was an Ovaltine and milk kind of hot cocoa drinker. None of that Swissmiss and water with dehydrated marshmallows.  My mom always gave us the good stuff.  The milk would heat just to boiling and you would have to catch it in time and skim the “skin” off the top and then pour it into mugs.  Cooking this Mexican cocoa on the stove reminded me of my childhood hot cocoa days.

Mexican cocoa (champurro)
1 cup evaporated milk
1 cup water
3 TBL flour
4 TBL cocoa
dash of salt
8 tsp sugar
Heat milk and water to a fast boil, stirring frequently. Reduce heat. In a mixing bowl, mix flour, cocoa, salt, sugar and 1/2 cup water. Blend until smooth. Add cocoa mixture to milk mixture and blend well. Cook over medium heat, stirring constantly until thickened. (Optional to add more water, depending on desired thickness of drink). Allow to come to a carefully watched bubbly boil. Serve in mugs. Sprinkle with a dash of nutmeg.

what up wednesdays

just a few things I’ve been up to lately……

My delicious breakfast in bed made by my sweetheart. It was so awesome and I ate it in bed while watching the last 2 episodes of The Affair. So perfect. Then I proceeded to get all dressed up in red leather pants and black high heeled booties and I cooked and baked and drank wine the rest of the afternoon and evening. We ate our Valentine’s meal which was steak and butternut squash gnocchi (homemade of course) while watching a few episodes of Homeland and then we stuffed our faces with all the pie and ice cream while we watched The Walking Dead. It was a pretty cool Valentine’s Day.

The pies I made for Valentine’s day which I shared here are almost gone. Both of them have barely a piece left. Gone in 2 days. True story. And the redberry cherry chocolate cream cheese pie was soooo freaking good after it sat overnight in the refrigerator. For those of you who don’t like cream cheese stuff, this pie doesn’t overwhelm with the taste of it because it’s mixed with sugar and whipped topping so it’s a very mild cream cheese taste.

Ok let’s talk Walking Dead. Such a crazy good episode. Don’t you agree? And can I just say- Daryl with a bow and arrow was sexy enough but Daryl with an RPG… OMG. I was totally holding my breath too thinking the bad guys were gonna kill Abraham or Sasha and take Daryl to the infamous bad guy Neegan and then BOOM! Daryl saved the day. And poor Carl lost an eye. And poor Rick saw his new love interest die. And oh wow! what an episode.

I made this pie for sunday suppers Valentine’s edition.  I mean who needs real food when you can have chocolate.  And raspberries.  And cherries.  And cream cheese. And sugar.  And pie!  The only thing to make it better is wine.  Oh wait, I have that too!!

This pie is based on a few different things.  I make a blue ribbon redberry cherry pie that is a hit especially with my sister’s family.  Then there is a raspberry chocolate cream pie from a local berry farm/winery that is really bomb. I found a similar recipe on the internet, so I decided to combine the two and came up with this redberry cherry chocolate cream cheese pie.  Can I get a hell yeah!

The redberry is just red raspberries.  I will give some props to my sister who came up with the redberry cherry pie and I just perfected it.  It’s the tart red raspberries combined with the sweet cherries that really make this combination work.  And now I’ve combined it with chocolate and a cream cheese mixture and have completely taken it over the top.

So I also made a heart shaped apple pie for my boyfriend for part of his Valentine’s present.  It’s another blue ribbon winner.  My very most popular pie that I make.  We are going to have a slice with coffee ice cream.  Can you say complete sugar overload-gain 5lbs in one day happy valentine’s day??

My boyfriend made me breakfast in bed.  Fresh squeezed orange juice, coffee, scrambled eggs, turkey bacon, and pancakes.   It was heavenly awesome!  I for real ate it in bed which I’m not sure I’ve ever done before.  That was my present plus scratch off lottery tickets which I always love love love. So I ate my wonderful breakfast and then I get to stuff my face with all the pie. Sounds like a good day to me!

Redberry cherry chocolate cream cheese pie
Pie dough for single crust 9″ pie
12oz fresh or frozen red raspberries(if frozen, thawed)
21 oz can cherry pie filling(drained of filling, reserve cherries-do not rinse)
2 TBL cornstarch
1/2 cup sugar
1 8oz package cream cheese, softened
1/3 cup sugar
1/2 tsp vanilla extract
1/2 cup whipped topping, softened
2 oz semisweet chocolate
3 Tbl butter
1.Place pie dough in pie pan and prick bottom and sides with a fork. Place in preheated 400 degree oven until lightly golden. Let cool completely.
2.In a saucepan combine raspberries, cherries, cornstarch and sugar. Cook over medium heat until mixture starts to boil stirring constantly. Remove from heat and let cool. Spread into shell and refrigerate.
3.In a bowl, beat cream cheese, sugar, and vanilla until fluffy. Fold in whipped topping. Carefully spread over berry mixture and refrigerate 1 hour.
4.In a microwave, melt chocolate and butter. Stir until smooth. Let cool 5 minutes and pour over filling. Refrigerate at least 2 hours. Store in refrigerator.

Happy Valentine’s Day!

I made us something really good for Valentine’s day! Your honey will thank me later…No honey? No problem! This cocktail is too good to pass up.

This cocktail is called “wild thing.” I thought it was appropriate for Valentine’s Day. It also immediately makes you start singing “wild thing, you make my heart sing!” This cocktail is made with tequila which can then make you sing “tequila makes her clothes fall off…” Is this cocktail karaoke?

This cocktail is slightly reminiscent of a margarita or it’s kind of like the my diet starts today cocktail but with tequila instead of vodka. Kinda sorta. This may be my new go to drink. Not as sour as a margarita but not sweet. And made with tequila, my favorite. This cocktail is bringing sexy back… ok I’ll stop with the songs now. Speaking of “stop”, did you ever see that ecard that says I never know what to do when I hear someone say stop. Is it- in the name of love? hammertime? Do I collaborate and listen? See I just can’t quit with the songs tonight.

Any plans for Valentine’s day? It’s President’s day on Monday. A double holiday weekend! That calls for a double shot of tequila in your cocktail! And and, The Walking Dead returns tomorrow night which also means you will want another double shot. Plus there’s all kinds of sales going on for President’s day which could put a hurting on your pocketbook which could also make you want another double shot. Are you drunk yet? Am I because I used the word pocketbook?

So let’s talk about this sexy cocktail….

Wild thing
2 oz tequila
1/2 oz lime juice
1 oz cranberry juice
2 oz club soda
1 lime slice
Combine all ingredients in a glass with ice. Putting on something sexy and singing “wild thing” optional…
